As the holiday season approaches, so do holiday parties and end-of-year-gatherings. This month’s sustainability series is focused on going green in the kitchen with meal preparation. James Beard Award-winning chef Paul Berglund will discuss how to create a sustainable, locally sourced holiday meal.

Berglund will share the key tenets of creating a sustainable meal and how to consider food seasonality in Minnesota. He will also address working with local farmers and how using farm-to-table concepts provides additional benefits.

Berglund is an accomplished chef and culinary director with 20 years of experience in the food and beverage industry. He advocates for sustainability and ethical food choices as a Director of the Sustainable Farming Association of Minnesota. His latest project in Rochester, “Fat Noodle,” is a series of pop-up, pasta-themed, dining experiences at Benedict’s Rochester.

The DMC Sustainability Series is a partnership with the U.S. Green Building Council. The presentation is free to attend. Healthy snacks will be provided; attendees are invited to bring their own lunch.
